Why do the oldest stars have the least metallicities?

According to the Big Bang theory, the earliest stars were made up of Hydrogen and Helium. The subsequent elements in the periodic table were formed during the reaction in the stars. Hence as new generations of stars were formed, the amount of metal content increased. Thus the metallicities of the oldest stars is the least.
